Uses "Sanuki Olive Yeast" from prefecture olives

 I want to make sake that is packed with the charm of Kagawa prefecture. It was Olive, which is also a prefecture flower and a prefecture tree, that made such a wish come true. From the yeast found in the olive fruits, the selection was repeated, and the Sanuki olive yeast suitable for brewing was born.

A new taste brewed with a young sensibility

 Shodoshima is a place where olive trees grow under the blessings of the sun. Young men and women who have moved to the island and Kisetsu toji(master brewers) from Tajima are at the core of this effort, enjoying making local sake that matches the “now.

 In the spring, when the olives are in full bloom, a limited number of 300 bottles of unpasteurized sake are shipped. This sweet sake, with a fruity aroma similar to that of melon, is one to drink with fish. In autumn, when the fruit ripens, the sake also matures. The sweetness is complemented by umami, depth, and a clean, crisp taste that is best enjoyed with meat.
